    ***CORRECTION to terms used for second fermentation: "Tirage" is the sweet wine/juice and yeast combo as well as the length of time the wine rests on the lees. "Dosage" is the sweetening agent added when the dead lees are removed to sweeten the final sparkling product (which is not added at Brooks.)

Elena has used her life perspective to create a winery that approaches the work with an intention and a purpose.
