  • We will be discussing the intersection of Sustainability & Nutrition. Joan Palmer created T.I.O.S.N = The Institute of Sustainable Nutrition. She has a Bachelor’s in Education, a Masters in Human Nutrition, and in 2011 earned a Certification in Herbology. In school Joan learned the clinical side of nutrition, and vowed when finished to teach how in hindsight she wished she’d been taught. (Hands-on, in the kitchen) Joan now teaches “The art & science of eating”. Answering the question: “What about food & health is important?” Learn how Joan’s background in both in Human Nutrition and Herbology, aligns with Eye Love Nature’s sustainability foundation principle of recognizing the connection of humans and nature (our food source). We'll discuss how to incorporate food as medicine, importance of seasonal eating, soil composition and how food item's nutrient value changes over time.
