    On this week’s episode, host Caryn Antonini is joined by Silvia Baldini, a classically trained, professional chef, business owner, author, speaker, seasoned media personality and winner of Chopped on Food Network. Born and raised in Torino, Italy, Silvia moved to the United States where she began her professional career in the advertising industry, quickly finding success as an award-winning art director. Her Italian upbringing instilled a passion for the culinary arts which prompted her to shift gears and pursue training at the International Culinary Center in NY. She went on to get her masters in restaurant management at Cornell and a degree from Le Cordon Bleu in London. Silvia has worked in restaurants in London, NY and CT which has included Michelin starred restaurants, the Ritz and Ottolenghi. She launched an innovative culinary group, Strawberry and Sage, has had her recipes and work published in numerous publications and recently authored a cookbook, Les Dames d’Escoffier New York Cookbook - Stirring the Pot.

Their worldclass aquaculture facility produces sustainable, cage free-fish in an effort to provide consumers with healthy, fresh fish and to help our oceans heal.

    Houston grew up on the water, accompanying his father on fishing trips, where he developed a passion for aquatic life. Ultimately, that enthusiasm became a lifelong career in the food industry, with the vast majority of those years in the seafood industry.

    On this week’s episode, host Caryn Antonini is out of the studio and on location with Josh Mesnik, owner and operator of Josie and Tony’s, a private supper club in the trendy SONO district of Fairfield County, Connecticut. Josh is a General Manager by training, bringing over 2 decades of experience to his first restaurant concept which also includes an Italian sandwich shop. He got his start in the restaurant industry waiting tables at Cafe Luxembourg and went on to work front-of-house at Sushi Samba and Bobby Flay’s Mesa Grill in Manhattan. Along the way, he discovered his passion for wine and interned under Virginia Philip, Master Sommelier at the Breakers in Palm Beach, Florida. As his career advanced, he served as lead sommelier at The Standard Highline, The Grand Hotel on Mackinac Island and the White Elephant on Nantucket. He achieved a 2-glass Wine Spectator Award and with his dedicated folliwing went on to open Josie and Tony’s.

A Canadian citizen of Italian-Argentine heritage, Seba began his career with the Royal Bank of Canada, but quickly learned that his passion lay in cooking as opposed to the financial world. His culinary journey has taken him from an Argentine food truck and restaurant in Canada to a bed and breakfast and private dining in Costa Rica and now currently he bakes pizza pies in the jungle at his restaurant Seba’s which was recently awarded the the Number 1 Pizzeria in Costa Rica by 50 Top Pizza.

Chef Sami studied at Helsinki Culinary school and then began his career at The Ivy in London where he found his beginnings in cooking with wild foods. From there, Sami cultivated his understanding and expertise of natural foods and returned to Finland where he has a thriving career, currently offering foraging and cooking courses as well as catering services. Chef Sami is an ambassador for Finnish wild food, and his mission is to educate people on the wild foods and the health benefits of whole foods. His passion is creating new wave vegetarian and raw cuisine.

Christian’s background and experience has been instrumental in shaping this second-generation family run estate. With a combination of Argentinian family roots and Californian history, the estate produces an array of award-winning wines in a state-of-the-art facility with sustainable practices. In addition to a variety of wines, the fabled, historic estate also produces grape juice and olive oil.

He creates recipes for customers on social media, and his goal is to educate his audience about delicious, sustainable and healthy cooking. He’s a passionate brand ambassador and spokesperson as well as an Italian Food Culture Educator around the globe. Chef Lorenzo hails from Bologna, Italy where he grew up with a passion for cooking and ultimately, traveled throughout the country, honing his skills and learning from top chefs in Italy’s various regions. He worked at New York’s famed San Domenico restaurant and then returned to Italy to open his own award-winning Osteria in Bologna. Soon after he began working for Barilla in Parma and has been with the company in the U.S. for over 20 years.
